北菇瑶柱炆海參 (份量和調味可因應多少自由調味) 主 料:北菇2兩(約80克),水發海參8兩(約320克),瑶柱 (3粒)( 發好) ,薑3片,蔥2條,紹酒1茶匙,生粉1/2茶匙,生油2湯匙,上湯1/2杯。 配 料:調味料:鹽1/2茶匙,生抽2茶匙,蠔油1湯匙,糖、胡椒粉、麻油各少許。 做 法: 1、把一半薑、蔥與小半鍋清水煲滾,放入海參同煮片刻,晾乾水後切厚片候用。 2、北菇用清水浸軟,剪去菇蒂,蔥一條切蔥度。 3、起鑊,燒熱二湯匙油,爆香剩下的薑、蔥,加入紹酒,放入海參和北菇,瑶柱 , 加入上湯及調味料用慢火 炆約10分鐘,用生粉加水埋芡後上碟完成。
